Roast Lamb Chops with Brussels Sprouts

I basically followed this recipe from Chef Edward Lee sans the fish sauce, where do you get that anyway?  Ivis and i never had opportunity to go fishing this summer, so there are no fish in the freezer from which to obtain fish sauce.  In place of soy sauce, i use Bragg’s Liquid Aminos.  Additionally, i just sliced the brussels sprouts rather than shredding.  No coriander or chili flakes (my husband is allergic to chili) and i used lemon juice in place of lime and red wine was substituted for the vinegar.  Don’t let the lack of ingredients keep you from trying nifty recipes.  Many can be eliminated or substituted and the dish will be just as great, not to mention your own creation. Go for it!!

A CSA App

A new tool is available for market gardeners who operate CSAs!

Jacksonville, OR, March 15, 2016 – The Siskiyou Sustainable Cooperative CSA in Southern Oregon has recently unveiled innovative, open source software developed through funds acquired from SARE (Sustainable Agriculture Research and Education) to assist CSA farmers in connecting with their
members. At a time when farmers work hard to keep up with some of the latest trends in the local food movement nationally, CSA coordinator Maud Powell sought to provide a high-tech, user friendly tool to support CSA members interested in having their member information right at their fingertips. “CSAs continue to be a great marketing channel for farmers, but in order to attract customers, they need to be adaptive to cultural trends,” says Maud.

The first of its kind, the CSA App was developed by Josh Shupak with assistance from Lars Faye of Chee Studio and Becky Brown of iWrite. Siskiyou Sustainable Cooperative CSA members participated in surveys and focus groups to determine the features and functionality that would be used in the App. The CSA App supports CSA members with easy access to product information, recipes, cooking and storage tips and nutritional information for the produce found in their weekly CSA shares.

The mobile friendly tool was created using a web based platform and is easily customizable by anyone comfortable using a computer and navigating the internet. “The whole idea is to keep it simple for the farmer and easy to use for the membership,” says Powell. “I wanted to help make CSAs more relevant and accessible for younger generations, and the most obvious way to do that is through the use of technology.” Farmers can utilize the templates in the web platform to create their very own personalized App that can include product information, recipes, cooking videos, farmer bios and any specific instructions about how and where to pick up weekly CSA box deliveries. Creative users may even find additional ways to provide valuable information to their members using mobile technology.

Access to the customizable web platform is provided free of charge, although a valid credit card is required to secure information in the account set up phase. All existing content is open source and available for use, although customization may be necessary to reflect the specifics of a particular CSA farm. What is CSA (Community Supported Agriculture)?

Egg Drop Soup for Liquid Diet

Home made egg drop soup:  (Tan Hua T’ang)

3 cups of chicken stock broth.

1/2 teaspoon salt (use Real salt or something that is 100% salt – check the label)

3 tablespoons cold water

1 tablespoon tapioca flour (cassava)* or cornstarch

2 eggs slightly beaten (farm fresh from pastured hens is best)

Heat broth and salt to boiling.  Mix cold water and tapioca flour; stir gradually into broth.  Boil and stir 1 minutes.  Slowly pour eggs into broth stirring constantly with fork, to form shreds of egg.  Remove from heat; stir slowly once or twice.

You can also make this without thickening it with the tapioca flour or cornstarch if it needs to be absolutely thin liquid.

For best medicine, you need to find a local farmer from whom you can purchase healthy pasture raised spent hens or broilers.  You may have to butcher them yourself.  Cook them down bones and all, pull off the meat bits, then throw the bones and cartilage back into the water and simmer another hour or so.  The goal is to get as much of the chondroitan out of the cartilage and minerals out of the bones and into your broth.  Once done, strain out the bones and let the broth cool.  Chicken fat is quite soft, so if you want to skim it off, you’ll eventually have to put it in the frig or other cool spot so that it will harden on the top of the broth so that you can remove it with a slotted spoon.

Buying chicken broth in the store is NOT the same product as what you are making here.

As always, find certified organic or organically raised ingredients.

This was a big hit with my father-in-law who is recovering from hernia surgery, is very weak, and really doesn’t have an appetite.

However, it’s quite good even if you aren’t sick or in recovery.
